Golden Graham S'mores Bars

I decided I was finally going to try making these again since the first go-around was not a success. I made a few adjustments and I think I finally got it right! Enjoy! 


INGREDIENTS:

- 2 Cups mini marshmallows
- 1 Cup Semi Sweet Chocolate Chips (Chilled)
- 1 Stick Butter
- (1) 12 Oz. Box Gold Graham Cereal
- 1 Bag Large Marshmallows
- 1 tsp. vanilla (optional)

DIRECTIONS:

1) Melt butter in a pot over medium heat. Once butter is melted, add bag of Large marshmallows and stir until almost completely melted. Stir in vanilla if desired.
2) Remove from heat and transfer butter mixture to a large mixing bowl and add cereal, stirring to coat.
3) Once cereal is coated, remove chocolate chips from freezer and add to cereal mixture.
4)  Add in the mini marshmallows. Gently stir until evenly distributed.
5) Press cereal mixture into prepared baking pan. Cover and refrigerate until set. Turn out onto cutting board and cut into squares. Keep stored in an air tight container in the refrigerator.

Makes approximately 20-24 bars depending on how big you cut them.




'Amburger's & Rice, Okay?

I decided to make a quick, easy, and old favorite this week. It's great re-heated and with the heat we have going on outside my husband has been MIA at work all week (he even missed all the festivities of the 4th of July).

Hamburger Rice Hotdish

INGREDIENTS:
- 1 lb. Ground Beef (I used turkey)
-2 Med Onions
-2 Cups Diced Celery 
-1 Cup Uncooked Rice (I did half brown half white)
-1 Can Cream of Mushroom Soup
-2 Cups Boiling Water
-1/8 Cup Soy Sauce (more or less to taste)
-1 Carrot (this was not in the original-but gives it some color)

DIRECTIONS:
1) Preheat Oven to 350 Degrees F.
3) Brown Meat, Onions, and Celery.
4) Once browned, pour boiling water in with meat, onions, and celery.
5) Add Soup to mixture and mix until blended.
6) Add Rice and Soy Sauce; mix until blended.
7) Combine all in a buttered/cooking sprayed casserole.
8) Bake about 1 hour.
